Soups are quick and easy to make, for those of you that don't have a lot of time for meal prepping! And they meet the requirements for the hCG diet. Here are a few recipes to get you started:
1.) French Onion Soup
• 2 cups beef broth
• 1 Melba toast crumbled
• 1 tablespoon lemon juice
• 1 half of an onion in thin strips
• 1 clove garlic crushed and minced
• Salt and black pepper
Brown the onions in water and lemon juice.
Combine beef broth and spices and simmer for 20-30 minutes.
Top with crumbled Melba toast.
2.) Tomato Basil Soup
• 2 cups chicken or vegetable broth (or substitute 1 cup water for 1 cup broth)
• 2 cups chopped fresh tomatoes
• 3 ounces of tomato paste
• 4-6 leaves of fresh basil rolled and sliced
• 1-2 cloves garlic crushed and minced
• 2 tablespoons chopped onion
• 1 teaspoon garlic powder
• 1 teaspoon dried oregano
• Salt and pepper
Blend all ingredients in a blender.
Pour into a saucepan and bring to boil.
Reduce heat and simmer for 20 to 30 minutes.
Serve hot, you may choose to serve with fresh basil leaves or parsley.
3.) Cream of Chicken Soup
Mix all ingredients in a blender or food processor. Mix completely.
Pour mixture into pan and bring to boil. Reduce heat, simmer covered for 25 minutes.
4.) Spicy Cabbage Soup
Put raw chicken in a pot with a few cups of water. Cook meat until fully cooked - add more water if necessary. Then add vegetables and spices and add water to level of vegetables. Add 2 tbsp tomato paste. Simmer on medium until vegetables are tender crisp. Season to taste - may need to add 1 tsp of sea salt or even another tbsp of tomato paste.
